Grip is the friction between the tire and the road. It depends on the rubber compound, the temperature, and the surface. More grip means more cornering speed. But grip is limited by physics.
Downforce is aerodynamic pressure pushing the car into the road. It creates artificial grip. The faster the car goes, the more downforce it generates. That is why F1 cars are faster through high speed corners than low speed ones. At low speed, there is not enough airflow to generate downforce.
A modern F1 car generates enough downforce at top speed to drive upside down. The floor, the diffuser, the rear wing. All of it is designed to push the car into the ground.
The tradeoff is drag. Downforce creates drag. Drag slows you down on straights. Teams spend millions finding the balance between downforce for corners and low drag for straights.
Monaco is all downforce. Monza is all low drag. Every track is a different compromise.
